I couldn't believe how this turned out. Normally, I don't like cauliflower but I could eat so much of it done this way! Give it a try and let me know what you think:)
1 Tablespoon of olive oil
1 cup of chopped onion
1 large cauliflower
1 tsp garlic
1 cup chopped red pepper
1 cup chopped green pepper
1 cup chopped mushrooms
1 can of diced tomatoes (juice included)
1 tsp coriander
1 tsp cumin
1 tsp oregano or basil
1/2 tsp chili flakes
pepper
1/2 cup chopped cilantro
1/2 of a fresh squeezed lime
Grate cauliflower and set aside.
Heat oil and add onion, garlic, red pepper, green pepper and mushrooms. Fry until slightly softened.
Add your spices, except for cilantro. Stir and cook for another minute.
Add your cauliflower and fry for about 10 minutes and then add your canned tomatoes. Continue to cook until your cauliflower is softened.
Remove from heat and add cilantro and lime
Enjoy!
